Campfire Skillet Pizzas {with Gluten and Dairy-Free Options}

Campfire skillet pizzas are so fun to make, and it's easy to let everyone choose their own toppings. This recipe can be made in a cast iron skillet over the campfire, over a bed of hot charcoal, or on a camping stove. And yes, the pizzas can even be made gluten and dairy-free!

Equipment

  • Cast Iron Skillet (one 12-inch, or two 10-inch skillets)
  • Fire-Resistant Skillet Lid, or Aluminum Foil
  • Fire Pit Cooking Grate (like this one to elevate a skillet over the fire)
  • Heat-Resistant Gloves
  • Spatula (for flipping pizza dough)
  • Spoon (for spreading pizza sauce)
  • Knife or Pizza Cutter
  • Non-Stick Cooking Spray

Ingredients
  

  • 1 13.8-oz Tube Refrigerated Pizza Dough (regular, not thin-crust) (I can't find gluten-free pizza dough in a tube, so I use these pre-made crusts by Mama Mary's. Any gluten-free crust will work.)
  • 1 14-oz Jar Pizza Sauce (check label for gluten-free, if needed)
  • 2-4 Cups Shredded Mozzarella or "Pizza Blend" Cheese (2 cups if making one pizza; 3 or 4 cups of cheese may be needed for two pizzas. I use Violife or Daiya brands when making these dairy-free.)
  • Toppings: Pepperoni, Cooked Sausage, Mushrooms, Vegetables, Olives, Peppers, etc.

Instructions
 

  • To cook over the campfire, make sure the flame has burned down to a height below your cooking grate. You don't want your skillet to be directly touching the fire or you'll burn the pizza crust.
  • Spray the skillet with non-stick cooking spray or brush with oil.
  • *This recipe will make one 12-inch pizza with a thick crust, or two 10-inch pizzas with thinner crusts.*
    Spread the refrigerated pizza dough on the bottom of a 12-inch skillet, or divide the dough evenly between two 10-inch skillets. Fold the edges over to fit the round pan.
  • Place the skillet on the fire cooking grate or on the camp stove and cook the pizza crust until the bottom is golden brown.
  • Remove the pan from the heat and carefully flip the crust in the pan with a spatula.
  • Spread a layer of pizza sauce on the crust, then add cheese and toppings.
  • Cover the pan with a lid or aluminum foil, then return to the heat and cook until the crust is done and the cheese is melted.
  • Let the pizza cool, then slice and enjoy!
