Have you ever had a craving for freshly baked breakfast muffins while camping? Satisfy those cravings with these super easy and tasty orange peel muffins! All it takes is a few fresh oranges, two packets of muffin mix, about a cup of water or milk, some foil, and about 10-15 minutes of cooking time. You can use any flavor of muffin mix that pairs well with the delightfully light and citrusy flavor infused from the orange peel.

Ingredients

  • 6 large oranges
  • 2 packets muffin mix (any flavor), regular or gluten-free. The just-add-milk or water type is easiest.
  • 1 cup milk or water; can use non-dairy milk  – Be sure to check the amount of liquid required by the muffin mix.

Cooking Instructions

1. Slice the oranges in half horizontally. Carefully hollow out the inside of each half with a spoon taking care not to poke any holes in the orange peel.

2. In a bowl, combine the muffin mix and the appropriate amount of milk, non-dairy milk, or water recommended by the muffin mix instructions and stir well.

3. Fill the bottom half of each orange with muffin batter to the rim.

4. Place the top half of each orange over the filled bottom half and wrap securely in aluminum foil.

5. Place wrapped oranges filled with muffin batter in the embers of a campfire, close to the flame but not touching it.

6. Bake for 10-15 minutes, depending on the heat of the fire. Rotate every 5 minutes for even cooking.

7. Use long-handled tongs to remove oranges from the fire and let them cool for 5 minutes before unwrapping the foil. Enjoy your orange peel muffins!
