Paleo Instant "Oatmeal"

Quickly prep the ingredients for this Paleo Instant "Oatmeal" at home prior to camping and enjoy a warm, filling breakfast with minimal work at the campsite. This recipe is so quick and easy, it's also great for those hectic mornings when you're rushing out the door to start your day. Grain-free and dairy-free, top this Paleo "Oatmeal" with fruit, nut butter, coconut, or anything else you like and enjoy!

  • Note 1: For a smoother texture, place all dry ingredients into a food processor and process for 10-15 seconds to finely chop the shredded coconut and blend the ingredients together.
    Note 2: After prepping the dry ingredients, store the instant oatmeal mix in a Mason jar or other airtight container. This makes preparing a bowl of paleo "oatmeal" super quick and easy!
    Note 3: If you pre-make a large batch of dry ingredients, use 2/3 cup dry mix and 1/2 cup non-dairy milk to make one serving of "oatmeal."
  • Combine almond flour, shredded coconut, flaxseed meal, cinnamon, and coconut sugar in a small saucepan.
  • Add non-dairy milk to the saucepan and stir to mix with dry ingredients.
  • Heat over medium-high heat for approximately 5 mins, stirring frequently, until desired "oatmeal" consistency is achieved.
  • Serve with your choice of toppings, and enjoy!
  • Topping ideas: fresh fruit (bananas, diced apples, berries), chia seeds, shredded coconut, almond butter, cinnamon, fruit jam, dried raisins, etc.
