Note 1: For a smoother texture, place all dry ingredients into a food processor and process for 10-15 seconds to finely chop the shredded coconut and blend the ingredients together. Note 2: After prepping the dry ingredients, store the instant oatmeal mix in a Mason jar or other airtight container. This makes preparing a bowl of paleo "oatmeal" super quick and easy!Note 3: If you pre-make a large batch of dry ingredients, use 2/3 cup dry mix and 1/2 cup non-dairy milk to make one serving of "oatmeal." Combine almond flour, shredded coconut, flaxseed meal, cinnamon, and coconut sugar in a small saucepan.
Add non-dairy milk to the saucepan and stir to mix with dry ingredients.
Heat over medium-high heat for approximately 5 mins, stirring frequently, until desired "oatmeal" consistency is achieved.
