Have you been looking for the perfect “oatmeal” recipe since you began a paleo way of eating? Oatmeal was definitely something I missed when I started my paleo journey. Since oats (and other grains) are a no-go in the paleo lifestyle and I missed the warmth and convenience of traditional oatmeal for breakfast, I knew it was time to come up with my own paleo-friendly version. Fortunately, this paleo instant “oatmeal” recipe is the perfect solution.
With a few simple ingredients and very little prep time, you can make a delicious, warm breakfast in a matter of minutes at home or while camping. Just whip up a batch (or two) of the dry ingredients in this paleo instant oatmeal recipe and store them in an airtight container. When you’re ready for breakfast, simply add your favorite non-dairy milk and cook over medium-high heat for 5 minutes.
To make the paleo instant “oatmeal” mix, you will need the following kitchen equipment:
- A small saucepan and a stirring spoon
- Measuring cups
- A food processor (optional – finely chops and blends ingredients for a smoother texture)
- A camping stove
Ingredients
You’ll need the following ingredients for the “oatmeal”:
- 1/2 cup almond flour
- 1/2 cup shredded coconut, unsweetened
- 2 TBSP ground flaxseed meal
- 1 tsp ground cinnamon
- 2-3 TBSP coconut sugar
- 1 cup unsweetened dairy-free milk
Paleo “Oatmeal” Instructions
1. For a smoother texture, place all dry ingredients into a food processor and process for 10-15 seconds to finely chop the shredded coconut and blend the ingredients together. (This step is optional but highly recommended).
2. Combine almond flour, shredded coconut, flaxseed meal, cinnamon, and coconut sugar in a small saucepan.
3. Add non-dairy milk to the saucepan and stir to mix with dry ingredients.
4. Heat over medium-high heat for approximately 5 mins, stirring frequently, until desired “oatmeal” consistency is achieved.
5. Serve with your choice of toppings, and enjoy! Topping ideas: fresh fruit (bananas, diced apples, berries), chia seeds, shredded coconut, almond butter, cinnamon, fruit jam, dried raisins, etc.
Note: After prepping the dry ingredients, store the instant oatmeal mix in a Mason jar or other airtight container. This makes preparing a bowl of paleo “oatmeal” super quick and easy!
*If you pre-make a large batch of dry ingredients, use 2/3 cup dry mix and 1/2 cup non-dairy milk to make one serving of “oatmeal.”
